6 onions, di...Try it this way, you might like it:<br /><br /><br />6 onions, diced (3 cups)<br />6 carrots, diced (2 cups)<br />8 potatoes, halved (5 cups)<br />250 grams of bacon fat<br /><br />3 tablespons of butter<br />2 tablespoons of thyme<br />1 tablespoon of diced garlic<br /><br />some orange peels<br />"snufje" nutmeg<br />"snufje" Cumin Powder<br /><br />1. cut the fat up into squares, place into a roast pan, and put into an oven at 375 F.<br />2. While the fat from the bacon renders, place the potatoes in boiling water for ten minutes.<br />3. Drain the potatoes in a colander and very roughly shake them up. You want them to be pretty beat up.<br />4. Place the potatoes in the roast pan with the bacon fat. Try and arrange the little squares of bacon fat around the potatoes. -Cook for 30 minutes.<br /><br />5. Prepare the butter/thyme/garlic and onions in a mixture<br />6. After 30 minutes remove the potatoes from the oven. Take a masher and flatten them out a little bit. -Do not mash them, just flatten them out a little.<br />7. Cover the potatoes in the butter/thyme/garlic/onions mixture. Place back in the oven until carrots are ready (See step 8)<br />8. Put your carrots into boiling water, add the orange peel, some oil, the nutmeg, and the cumin.<br /><br />9. After 15 minutes, the carrots should be soft. Take them out of the water, drain them in a colander, and put them into the roast pan with the potatoes. Cook for about 15 minutes.<br /><br />10. Remove all vegetables from the roast pan. At this point you have some really tasty Roast vegetables. Anyone who won't eat hutspot will gladly eat the roast vegetables.. Anyone who wants the hutspot...<br /><br />11. Mash the vegetables together!<br /><br />This makes for a special hutspot with some slightly crispy potato flavor.. 2...I would try it like this:<br /><br />(two baguette's)<br /><br />2 cups ice cold water<br />1 teaspoons or less of instant yeast <br />1 1/2 teaspoon salt<br />3 cups flour (refrigerated)<br /><br />Mix the dough together either in an electric mixer or by hand. If mixing by hand use a cold metal spoon. If mixing with a machine, mix slowly for about 8 minutes. You want to keep the dough as cold as possible. <br /><br />After the dough gets to a sticky-ish condition where it is sticking to the bottom of the bowl, and not the sides, transfer to a lightly oiled bowl, cover with plastic and immediately refrigerate for 18-24 hours.. or more.. up to 3 days.<br /><br />Remove from the fridge, leave out at room temperature 4 hours from the time you want to bake it. When the dough doubles from the original size, stretch it out into 6 by 8 inches across. Cut in half and carefully shape into baguette forms, place on parchment paper. -Being very careful the whole time to let as little gas release from the dough as possible!<br /><br />Place an empty roasting pan in the oven, pre-heat oven to 500-600 F.<br /><br />Place baguettes on top of the parchment paper onto pizza stone of the oven. Pour a cup of water into the roasting pan, and shut the door of the oven. -Wait 30 seconds. Spray the sides of the oven with water, and shut the door for 30 seconds.
